CRISPY OAT COOKIES: From Michael
Aunt Udeena's Recipe
This dough will need tasting several times while you are baking the cookies it's inexplicable, but true!
2 sticks butter, softened
1 C sugar
1 C packed brown sugar
1 egg
1 C vegetable oil
1 t vanilla
3 1/2 C flour
1/2 t soda
1/2 t salt
1 C oats, uncooked
1 C crushed corn flakes
1/2 C flaked coconut
1/2 C chopped pecans
Preheat oven to 325 degrees F. Cream the butter, gradually adding the sugars, beating well at medium speed. Add egg, beat well. Add oil and vanilla, mixing well. Sift flour, soda and salt and add to creamed mixture. Mix well (surprise!). Stir in oats, corn flakes, coconut and pecans. Shape into one inch balls and place on ungreased cookie sheets - flatten with a fork. Bake approx. 15 minutes. Cool slightly then remove from pan to cooling rack. Makes about 10 dozen, and they freeze perfectly.
ARTICHOKE DIP: From Dana
Ingredients:
2 10-oz pkg frozen chopped spinach
1 small onion chopped
1 1/2 tbsp butter
8oz cream cheese
1 14oz can artichoke hearts chopped
1 cup sour cream
1 cup mayonnaise
1 can 6oz chopped mushrooms
1 cup white cheese (our choice)
1/2 cup grated parmesan cheese
Add to your taste: salt, black pepper, cumin or cayenne, lime or lemon
juice
Other possible additions: water chestnuts, various hot peppers
Directions:
1) Thaw and drain spinach thoroughly.
2) Saute onion lightly in butter.
3) Mix all ingredients except parmesan and heat in double boiler.
4) Pour into hot chaffing dish and sprinkle on parmesan cheese.
NOTE: I don't own a double boiler so I put it all in a casserole dish and
stir. Heat for 10 minutes in the oven @ 350, stir again, and continue
heating for another 20 minutes. When the edges are bubbling I add parmesan
cheese and continue heating until edges golden brown.

SOUTHWESTERN DIP: From Janice
1 container of salsa (I use Santa Barbera mild).
Rinse 1 can of black beans.
About 1/2 to 3/4 can yellow-white corn rinsed.
Juice of 1 lime. Chop a bunch of cilantro.
APPLE/CARAMEL COOKIES: From Janice
cookie dough
cream cheese
1/2 cup peanut butter
1/4 cup brown sugar
1 teaspoon vanilla
apple slices
cinnamon
caramel sauce
chopped peanuts
On a baking stone (or cookie sheet), bake dough in one large cookie. Let cool. Soften cream cheese. Mix with peanut butter, brown sugar, and vanilla. Spread over cooled cookie dough. Layer apple slices, cinnamon, warmed caramel sauce and chopped peanuts.
BON'S BROWNIES
Does the teacher of god have to give up chocolate? The answer is, "No, of course not." Just eat it with the Holy Spirit.
Try Bon's Brownies...
1 cup vegetable oil
2 cups sugar
2 tsp vanilla
4 eggs
1 cup unsifted self rising flour
1/2 cup cocoa
Blend oil, sugar, vanilla. Add eggs and beat well. Combine flour and cocoa and add to egg mixture. Spread in a 13x9x2 sprayed pan. Bake at 350 until brownie begins to pull away from the edges/test with a toothpick. Cool in pan. Cut into squares.
Optional: I usually sprinkle chocolate chips on top while still hot and then spread when melted to make icing.
These brownies are best eaten the same day, so bake them and bring them to class to share with your brothers and sisters.
BREAKFAST CASSEROLE
This is the casserole the Mary and Dick Foster often bring to the "First Sunday of the Month" class breakfast.
Ingredients
1 lb. sausage
1 bag "Simply Potatoes" has browns
pepper to taste
2-3 cups shredded mild cheddar cheese
6 eggs (beaten)
1/2 large onion (chopped)
Lowrey's seasoning salt (to taste)
1/2 teaspoon onion powder
1 small jar sliced mushrooms (optional)
dash of salt
3 tablespoons of milk
Preparation
Brown sausage and 2 tablespoons of chopped onion together until brown. Drain and set aside. Mix has browns, remaining onions, seasoning salt, pepper and onion powder together. Place this mixture in a lightly greased 9x13 casserole dish. Sprinkle cheese on top of potato mixture. Spoon sausage on top of cheese. Top this with mushrooms. This casserole can be refrigerated overnight or frozen!
When ready to bake, mix together and pour over casserole:
6 eggs (beaten)
dash of salt
dash of pepper
3 tablespoons of milk
Bake @ 350 degrees for 45 minutes (or until done).
